Smoky Turkey Stuffed Bell Peppers with Black Beans and Brown Rice

One Pan · Meal Prep Friendly · Anti-Inflammatory · High Protein

Lean ground turkey is a powerhouse protein that supports muscle maintenance, keeps you full for hours, and carries significantly less saturated fat than ground beef — making it one of the best swaps for cardiometabolic health

✔ Black beans bring soluble fiber and plant-based protein that work together to lower LDL cholesterol, slow glucose absorption, and feed your gut microbiome

✔ Brown rice adds complex carbohydrates and magnesium — a mineral most Americans are deficient in that plays a direct role in regulating blood pressure and blood sugar

✔ Bell peppers are one of the most vitamin C-rich vegetables you can eat — and vitamin C supports arterial flexibility and reduces oxidative stress on the cardiovascular system

✔ Smoked paprika, cumin, and chipotle create bold flavor without relying on excess sodium — this meal is seasoned with intention, not a salt heavy spice packet

HOW TO MAKE IT:

  • Preheat oven to 400°F. Place hollowed peppers cut side up in a baking dish, drizzle with olive oil, season with salt, and roast empty for 10 minutes. This prevents soggy peppers.

  • Heat olive oil in a skillet over medium-high. Cook onion 3 minutes, add garlic for 60 seconds, then add turkey and cook through, breaking it up as it goes — about 5 to 6 minutes.

  • Add all spices directly to the turkey and stir to coat. Cook one minute so the spices bloom. Stir in fire roasted tomatoes, black beans, and brown rice. Simmer 3 to 4 minutes until the mixture tightens up.

  • Pull peppers from the oven, pack filling into each one, and top with shredded cheese. Bake uncovered 18 to 20 minutes until peppers are tender and cheese is bubbling.

  • Finish with fresh cilantro and a squeeze of lime right before serving.
